But that format is ALAC - and I feel more “open” if I use FLAC rather than ALAC

FYI you can convert ALAC to FLAC without any loss in quality.

To be clear, I would prefer the artist be in the title. I think it just makes everything much clearer on both the database and user level.

You should (or at least could) put that local guideline in the series Annotation.
