I want to know if there is a way to remove the Album tag all together. I have a lot of various artists albums and would rather it just sort by Artist and leave the Album part out completely
There is a Picard plugin called “Load as non-album track” with the description «Allows loading selected tracks as non-album tracks. Useful for tagging single tracks where you do not care about the album.» which sounds pretty much exactly like what you’re asking for. 
You should be able to download, install, and enable it directly via Picard (at least if you have the most recent 1.4.2 version). Look around in the settings, there should be a “Plugins” or similar page/tab.
